This quick and easy entree makes for an impressive presentation worthy of entertaining.
4 flour tortillas, each with 8-inch diameter
Cooking spray
1 pound lean ground beef
3/4 cup bottled salsa
3 cups torn leaf lettuce
1 cup sliced cherry tomatoes
1/2 cup ripe olives, sliced
1 cup shredded sharp cheddar cheese
Sour cream and sliced avocado for garnish
Preheat oven to 400-degrees. Arrange 4 ramekins or similarly-sized dishes on a large baking sheet. Place tortillas over each ramekin and coat top side of each tortilla with cooking spray. Bake tortillas 5 to 6 minutes, or until they have cooked down over the ramekins to form "bowls." Tortillas will be golden in color. Remove from oven.
While tortillas are baking, brown beef in skillet over medium-high heat, breaking meat up with back of spoon as it cooks. Blend salsa with beef in skillet and cook 1 minute longer, or until mixture is heated through.
Place tortilla bowls on plates. Divide lettuce between them. Spoon beef mixture over lettuce. Top with sliced tomatoes, olives, and cheese. Garnish with sour cream and avocado slices. Serve immediately.
