This recipe has been in my family for years. My Grannie Lee lived next door to a Hungarian lady who taught her how to make cabbage rolls.
It does take awhile to put together, but freezes well, and makes a crowd sized amount.
The sauerkraut is served on the side like a veggie.
We had this frequently when I was growing up. All it needs is crusty rolls and butter.
Ingredients:
2 large heads green cabbage
3 pounds hamburger
1 1/2 pounds ground chuck or pork
1 large onion, chopped fine
1 1/2 cups long grain uncooked white rice
1 8 ounce can tomato puree (originall recipe calls for a large can)
3 14 ounce cans sauerkraut
1 quart diced tomatoes
1/3 cup shortning (original recipe calls for a handfull)
1 teaspoon salt
1 treaspoon pepper
Make this the day before you need it.
Steam the cabbage by taking out the core, place in a large bowl, cover with plastic wrap, add 1/4 cup water and microwave repeatedly, removing the leaves as they soften.
You will also want to devein the cabbage, just the large veins.
In a large bowl add your meats, onion, rice, shortning and salt and pepper.
That's your filling.
Take the prepared cabbage, place filling in the end of the cabbage you deveined .
The amount depends on the size of the cabbage leaf.
Place the sides of the cabbage over the filling, and roll up.
Preheat oven to 350 degrees.
Spray a large roaster to prevent rolls from sticking.
Place some extra cabbage pieces over the bottom.
Place a row of cabbage rolls on top of the cabbage pieces.
Cover the rolls with the half the sauerkraut and all the tomatoes.
Make another row of cabbage rolls. cover with rest of the sauerkraut and spread tomato puree over all.
If you have rolls left over, just make 2 layers and proceed with the sauerkraut and puree.
Add just enough water until you can see it come up the sides of the pan. Maybe about 3 cups.
Cover tightly with foil and cook for 4 hours.
Refridgerate over night.
The next day, place in a 350 degree oven and cook until heated through.
Since this is such a large quantity of food it probably will take 2 hours to cook through.
